4/17/14

St. Patty's day required a St. Patty-esk meal.  She delivered.


Corn beef in the slow cooker results in meat not needing a knife.



Side: Cabbage and yellow potatoes with Italian parsley.  I enjoyed with a glass of Makers with green dye

4/16/14

Tonight we had:

Salmon with quinoa that was accented with cilantro ( I sound pretty lame there ).  Banana chips thrown in for the hell of it...it worked.


Fish sauce consisted of (and not limited to because I don't know what the wife put in it):
  • Avocado
  • Red onion
  • Cilantro
  • Lime/Lime Juice



I probably should have had some white wine with this but I had red -- guess I f'ed that up but I'll live.

I'd have it again.

Tonight we had:


Mini burgers!  Was good.  Two different types: beef and chicken.  I had two beef and one chicken burger (because Erin is a doll for having two chickens and one beef), we both agreed beef was better.  Bacon was an absolute homerun with this meal.

The skinney:

  • Beef or chicken
  • Bacon
  • Tomatoes
  • Avocado
  • [Burger sauce of choice]
Sides:
  • Epic salt n' pepper potato chips.

The sides were good but anything could have worked.

Would I eat again?  Yes, it felt light but was a filling meal
